Just click on the screen to complete a series of processes, such as table selection, ordering, checkout and so on. Each cute robot delivers delicious food to the table. No one in the back kitchen is empty but the huge arm of the machine keeps stirring up… Scenes that used to exist only in science fiction movies have now become reality with the emergence of smart restaurants. What exactly is a smart restaurant like? Why do business giants flock to layout? What is the future development?

Intelligent restaurants are in fashion

Has become a listed company’s Haidilao, not satisfied with the status quo, always want to change patterns to attract customers. In October 2018, Haidilao opened a “smart restaurant”.

Entering the dining room, the huge screen in the waiting area is noticeable. Scanning the two-dimensional code on the screen can participate in the small game independently developed by Haidilao, and can also see the real-time numbering situation. From cherry blossoms flying all over the sky, snow-capped snow mountains and vast stars, the omni-directional surround projection can change different scenes, giving customers a fresh feeling.

Intelligent vegetable warehouse is a constant temperature warehouse of 0 to 4 C. The “vegetable matching manipulator” grabs the corresponding vegetable from the warehouse according to the content of the order. How to accurately identify dishes? It relies on the RFID (Radio Frequency Identification) chip at the bottom of the dish, which records the dish information, and can help restaurants find and deal with expired dishes in time.

In addition, the store is equipped with a number of intelligent dining robots, intelligent dishwashers and other high-tech equipment.

In addition to Haidilao Smart Restaurant, Jingdong, Alibaba, and even the real estate company Biguiyuan, have all laid out smart restaurants. Machines are gradually replacing catering service personnel.

Big Data Booster Restaurant

Close service has always been the trump card of Haidilao. Would it lose its colour if it were replaced by cold robots?

As we all know, robots can not only improve work efficiency, reduce errors, but also liberate manpower. Industry insiders say that freed people can engage in jobs that cannot be replaced by machines, such as communicating with customers.

Intelligence is only a means, experience is the purpose. Analysis based on big data is the key to restaurant intellectualization. Integrated data analysis platform collects user information from chain stores for data analysis, and provides corresponding operational planning suggestions for different stores.

Xiao Huang, a Beijing resident, said, “I have been to an intelligent restaurant before. There is only one robot in the restaurant. The walking speed is very slow. It can’t improve the speed of serving food at all.” Industry insiders pointed out that the current cooking robot, intelligent restaurant is still in its infancy. Intelligent social catering services include information collection and processing, service, processing and subsequent presentation, rather than simple “robotic cooking” or “robotic meal delivery”.

In the Internet era, improving user experience is the trump card for enterprises to win users better. Whether it is replacing human resources with machines or judging users’psychology with big data, it is the way to enhance the user experience in catering industry.

Reducing Cost and Increasing Efficiency to Promote Development

China’s catering industry has experienced a transformation from pursuing food and clothing to pursuing spiritual satisfaction since the reform and opening up. The business turnover of catering industry has achieved double-digit high-speed growth for more than 20 years. The industry has bright prospects and huge market space.

Feng Enyuan, vice president of China Culinary Association, said that the development of catering robots has been accelerated by technological progress, increased labor costs, shortage of highly skilled personnel and the increasing demand for public catering services.

Tang Siyu, head of Jingdong X Future Restaurant, said that the catering industry continues to face the challenges of rising human costs, operating efficiency and changing experience needs of consumers. The application of robotics and intelligent technology can effectively reduce costs, improve efficiency and bring fresh feeling to consumers.

According to the China Robot Industry Development Report 2018 released by the China Electronics Society, only Pangolin and Zhongdedike, two of the 32 active public service robots in China, focused on dining robots, are listed in the second echelon. At present, there are no enterprises focusing on cooking robots.

Tang Siyu said that cooking robot technology continues to evolve, but its application is still at an early stage. Whether it is technology application orientation, technology stability, or the actual operation of human coordination, more attempts are needed. However, reducing cost and increasing efficiency for operation is the main direction of the development of catering technology, and the gradual expansion of the scope of application of technology will be the general trend.
